I woke up this morning, and felt so toasty warm in my blanket. Stepping outside of it, though? ARCTIC TUNDRA! Alright it was just a little chilly, but it immediately gave me this feeling of making all kinds of soups! If you know me, you’d know that I basically AM a potato. Potatoes are life. What better soup to kick start the season with than potato soup?!So I have a hard time trying to find a vegan potato soup recipe that is what I dreamed of. I just wanted a super thick and chunky soup! So I came across this recipe, and it’s originally not chunky and you can see in the pictures in the site. However, after some tweaks, I managed to make an awesome soup! Check out the recipe from It Doesn’t Taste Like Chicken’s Vegan Potato Soup
The recipe consisted of: oil, celery, carrots, onion, garlic, potatoes, vegetable broth, coconut milk, and salt!
Seems easy enough right? Right! It was fairly easy. So I followed the recipe pretty similarly. Once everything is soft and hot in the pot, you’re supposed to blend with an immersion blender… which I do not have. What a surprise that I can’t do a recipe exactly! So I decided to use my food processor to blend some of the soup.
So, I poured about half the soup, blended it and it was smooth but slightly thick! Sweet, I thought. Poured it into the remaining liquid soup and stirred. It just.. turned back into liquid form! It was just a watery soup! I don’t really know exactly what I did wrong except that the food processor may have blended it too well? So what now?
Not pictured: The magical Cornstarch. Oh the sweet heavens blessed me with a container of cornstarch! I added some to the soup and brought it to a boil. Voila! It came out pretty thick! I could have added more to make it super thick, but it was absolutely delicious! I will definitely make it again, as long as I have some cornstarch on hand!
